Bittersweet Chilli

Hearty Recipe

Bittersweet Chilli

Active Time: 10 minutes

 

Total Time: 30 minutes

Ingredients

• 1½ lb lean ground beef

• 1 large red onion, chopped

• 1 medium red pepper, chopped

• 3 Tbsp chili powder

• 2 tsp minced garlic

• 2 tsp cumin seeds or ground cumin

• 1 tsp dried oregano

• ½ tsp salt

• 1 can (28 oz) fire-roasted crushed tomatoes

• 1 can (15 oz) red kidney beans, rinsed

• 1 cup water

• 1 Tbsp chopped bittersweet chocolate (optional)

Toppings: shredded Cheddar cheese, chopped red onion, red pepper and cilantro

Garnish: sliced avocado and red pepper (optional)

Directions

Heat a large, deep nonstick skillet over medium-high heat. Add beef, onion and red pepper. Cook 5 minutes, stirring to break up meat, until it is no longer pink.

Stir in chili powder, garlic, cumin, oregano and salt. Cook, stirring, 1 minute until fragrant. Stir in tomatoes, beans and water; bring to a boil. Reduce heat, cover and simmer 15 minutes to develop flavors.

Remove from heat; stir in chocolate (if using) until melted. Serve with some or all of the Toppings.

Rockinghorse Firewalk – 24 February

Come and join us for a fun packed evening of entertainment and firewalking on Brighton seafront!  All firewalkers receive two hours training on the night and a certificate and complimentary glass of bubbly.

Monkey Business – Throughout the month of March

Want to shake off the winter blues and kick start 2012?  We invite you to take up the ultimate entrepreneurial team building challenge throughout the month of March and help raise money for sick children near you.   An award ceremony will take place on 29 March with entertainment, nibbles and wine.

Rockinghorse 5 a-side Football Tournament – 18 March

Teams of 5-8 players are invited to this indoor tournament at Sussex University.  Teams play a minimum of six games and there’ll be great prizes for the top three teams.

Registration fee: £30 Cost: £240 per team

Rockinghorse Rock and Roll Quiz – 22 March

Get swatting up and go head to head with some of Brighton and Hove’s brainiest for a fantastic night out with colleagues or friends.  Entry cost will include food and a drink.  There will also be a raffle and auction prizes up for grabs too.

Cost: £20 per person

Skydive – All year round, all over the UK!

Always wanted to jump out of a plane?  Now’s your chance to experience the awesome thrill of a lifetime.  Make this year your leap year and jump for Rockinghorse!

Brighton Marathon – 15th April

Now in its third year the Brighton Marathon is quickly becoming one of the most popular marathons in the UK.  The route starts with a loop of Preston Park and winds through the city centre before passing the iconic Brighton Pavilion and fabulous stretches of coastal road where the South Downs meet the English Channel.

If you CARE and want to get FIT for SPRING, join us to help raise money for 2 AMAZING charities!
Our instructors will run 6 fun and challenging classes throughout the day: 

9am Zumba
10am Spinning
11am Yoga
12pm Boxercise
1pm Kettlebell Conditioning
2pm Core Stability

Suggested donation £4 per class.
